Origin and production. The production of dark tea began in the early 16th century, and during the Wanli Period (1573-1619), Sichuan black tea was gradually replaced by Hunan dark tea. Hunan Anhua tea production since the Tang Dynasty, has produced "Qu Jiang thin, a catty 80 pieces" records. In the sixth year of Song Xining (1073 AD), after the establishment of Anhua County, the court established Boyi market (that is, tea market) on the north bank of Zishui, and exchanged (exclusively) Anhua tea with rice, salt, cloth and silk. At that time, Anhua steamed green cake tea represented by "Qujiang thin slice" was not modern black tea, but Anhua tea gradually developed with the course of history by virtue of its natural favorable conditions.
Origin of the name. The term "dark tea" originated from Anhua, Hunan Province, and first appeared in the Ming Dynasty imperial historian Chen Duan's speech: "commercial tea is low in false, and it is known to be black tea", referring to the Sichuan green tea formed by autoclaved black tea. Later, the dark tea formed in the folk practice of Anhua, Hunan Province, which was produced in the process of wok-frying, retting, fire baking, etc., gradually replaced the Sichuan black tea and became the mainstream.
Classification and characteristics. According to the different production process and origin, dark tea can be divided into tight tea and loose tea, which includes brick tea, cake tea, column tea and so on. In the storage process of aged dark tea, microorganisms undergo generation reproduction and metabolism, and produce a series of unknown small molecule active substances, that is, secondary metabolites, which have special effects on maintaining human health.
