低聚异麦芽糖用于食品饮料中:
低聚异麦芽糖是采用淀粉为原料,通过酶的作用,经过液化、浓缩、干燥等一系列工序浓缩而成的以低聚异麦芽糖为主要成份的白色粉末状淀粉糖制品。
产品特点
低聚异麦芽糖味质好,可用来代替部分蔗糖,减低食品甜度与改善其味质,对于糖果,糕点等的组织与物性无影响。
低聚异麦芽糖粉的耐热,耐酸性好,在PH3、120℃之下长时间加热不会分解,应用到饮料、罐头及高温处理或PH值食品中可保持其特性和功能。
低聚异麦芽糖保持水分不易蒸发,对各类食品的湿润及品质的维持的效果好,并能抑制蔗糖和葡萄糖的结晶形成,对稍存放即硬化的食品能防止淀粉老化,
而延长保存时间。
低聚异麦芽糖的冰点下降与蔗糖接近,冻结温度高于果糖,添加到面包、发酵乳(酸奶中,不会被酵母菌、乳酸菌利用掉而残留在食品中,发挥各种特性,
不防碍正常的乳酸菌。
