做面包的黄金法则：

1、做面包一定要用高筋面粉，做蛋糕一定要用低筋面粉，注意：超市有种面包粉是炸猪排的不是做面包的；

2、放料时盐不能遇到酵母，否则会抑制发酵，影响发酵效果，先放盐，再放面粉，酵母放在最上面；

3、如果皮太硬的话，可以选择烧色浅的程序，或者稍微多放点水，或者把水换成等容量的鸡蛋和牛奶；如果面包里面成块没能烤熟或者看上去比较湿，则应该少放一点水。

4、不能既加了水又加牛奶和鸡蛋，如果加了牛奶和鸡蛋则要减少相等分量的水，牛奶不要从冰箱一拿出来就加入，冰的会影响发酵，牛奶在微波炉转几秒或者等一会到常温了再加入，所有原料都要常温的哦包括水，热的冷的都影响发酵；

5、放糖过多或者保温太?没崾姑姘浣沟模徊还皇斓幕埃实钡谋Ｎ驴梢允姑姘镜酶欤?

6、最好放点黄油，没有的话，植物油也凑合；

7、改良剂是可以使面包变得更蓬松、口感更好的化学物质，可用可不用，因为对健康有害，建议不要长期使用。
